Ray,
How did you get your name and phone number to appear on your opening screen? I assume the wallpaper is your own photo or a photo from somewhere besides what is available in the wallpaper setting. I do not see that picture as an option in my settings.

Bob,
First, Google for something like "iPhone 6 wallpaper", and then save an image you like to your Mac desktop ... or use one of your own photos, like I did for my iPad.
Note that you want an image that will show total contrast to your text.
After that, I have been using Pixelmater to add a text box (see screenshot).
Although with recent versions of Preview, now the text could be added using the Toolbox. (see second screenshot)
Finally, add the resulting jpg to your Photos collection, and from your iPhone/iPad, select Settings>General>Wallpaper>Choose a New Wallpaper.
