I just discovered that screenshots can be taken of the Apple Watch in a way similar to that of an iPhone or iPad ... just press the Digital Crown and side button simultaneously. The image is immediately added to the iPhone's Photos app library.
Here, for example, is a screen shot of my home screen.
Screen shots such as these would be very handy when doing Apple Watch presentations.

Apparently, Apple Watch has AirPlay. So can it be set to mirroring?

Currently with Apple Watch, Airplay can only route audio to another Bluetooth-enabled device, like an iPhone or an Apple TV.
There is no video mirroring, and I can't imagine why it would be wanted, anyway.
