People have said, and I think it's mostly correct, never to upgrade anything in the middle of a project.
And I think you are right to duplicate one of your big documents and then test in the current Pages.
One thing: it sure looks like Apple is actively updating and improving Pages (as well as Numbers and Keynote), so I don't think you're risking Pages going away any time soon.
