Using the Help menu reveals that Paragraph Style selection is now available from the Format sidebar (click the Format icon to show/hide it).

To see the available paragraph styles, just click on the disclosure triangle (see screenshot).

Once you get past the concept that the Inspector icon has been replaced by the Format and Setting icons, Pages '11 is pretty much the same as other versions. Use the Settings icon to adjust document margins, headers, and footers. Use the Format icon for customizing text and graphics.

Apple has said that Pages 05 is a work in progress.
Pages 5.1 was released today.

Thanks, Ray, for a good show of where to locate styles and for your other encouraging comments.

Pretty soon I will take the time to experiment with this and get used to the changes. Then I'll see what happens working on a complex document. 8-)

I had to get used to the Inspector icon, so I guess I can get used to seeing Format and Setting icons.
I do wish "they" would make up their minds...
