Safari Collections versus Bookmarks

I am wanting to clean out my various bookmarks saved for Safari.
With that intent I studied the layout a bit and came up with confusion when I looked at "Show all Bookmarks".

What is the difference between Collections and Bookmarks?

Thank you, Stephen and Ray. I didn't know to look in the upper right hand corner of iTunes Store for my account name. It was the old name. I used the pull-down menu shown by Ray to sign out. That made a change from showing my "account name" to "Sign in" I then signed in with correct info. Upon quit ...

and Rick - by golly, you are right - any editing in the text makes the first line into a subject heading in notes.

Thank you, Stephen for a very thorough reply. I have now figured out that for me the way to go with notes and Safari is to select the desired text in Safari window, command C to copy, then open a new note, type in my note name, command V to insert the copied text and presto - I am all done without h...
